Kaju katli recipe
Kaju katli recipe ek bahut hi swadisht mithai hai jo aam taur par shadiyo, tyoharo aur kisi bhi khushi ki mauke par banai jati hai. Is mithai ko ghar par banane ke liye neeche diye gaye kadam follow karein:

- 2 cup kaju (cashews)
- 1 cup chini (sugar)
- 1/2 cup pani (water)
- 1/4 tsp chandi ka vark (edible silver foil)
- 1 tsp ghee
- choti elaichi powder (cardamom powder) - swad anusar
Directions:
Sabse pehle cashew ko ek grinder mein daal kar powder bana lein. Dhyan rakhein ki powder bilkul smooth ho jaye.
Ek non-stick kadhai mein ghee ko garam karein aur usmein cashew powder ko daal dein. Madhyam aanch par cashew powder ko 2-3 minute tak bhunein aur acchi tarah se mila lein.
Ab ismein chini aur pani daal dein aur acche se mila lein. Is mixture ko dheeme aanch par chalate hue 10-12 minute tak pakayein, jab tak ki yah ek dough ki tarah na ban jaye aur kadhai ke kinare se alag hone lage.
Ab mixture ko thoda thanda hone ke liye chhod dein. Jab thanda ho jaye to ise ek saaf aur sukhayi hui surface par rakh dein. Ise rolling pin ki madad se ek chakla ki tarah bel lein.
Ab is rolled dough ko chandi ka vark se sajayein aur choti elaichi powder se sajayein.
Is dough ko apne pasand ke anusaar pieces mein kaat lein aur kaju katli taiyar hai.
Note:
Agar dough bahut hi dry ho raha hai to ise thoda sa doodh (milk) daal kar mix karein.
Dough ko over mix na karein, nahi to yah kadak ho jayega aur kaju katli banane mein asafal ho jayega.
Kaju katli ko airtight dabbe mein rakh kar 3-4 din tak store kar sakte hain.
